Ingredients: 2 cups sushi rice. 4 sheets nori seaweed. 1 avocado, ripe and sliced. 1/2 cucumber, julienned. 8 large shrimp, cooked and deveined. 1/4 cup mayonnaise. 1 tablespoon sriracha sauce. 1 teaspoon sesame oil. 1/2 teaspoon sugar. 1/4 teaspoon salt. Black and white sesame seeds for garnish. Soy sauce, for serving.
Instructions: Follow the directions on the package to make the sushi rice, then let it cool. Put mayonnaise, sriracha sauce, sesame oil, sugar, and salt in a small bowl. Mix them together to make spicy mayo sauce. Put a nori sheet on a sushi mat made of bamboo. Leave an inch of space at the top of the nori and spread a thin layer of sushi rice over it. Put slices of avocado, cucumber, and shrimp in the middle of the rice. Put some hot mayo sauce on top of the fillings. Use the bamboo mat to roll up the sushi tightly, and use a little water to seal the edge. Cut the sushi roll into 8 equal pieces. Set out a plate to serve the sliced sushi roll. Serve with soy sauce and sesame seeds on top.
