$40 challenge. I have $40 a large stash of tofu and a big bag of brown rice to last till next Monday night. For the next week I am going to post what I cook because broke is fascinating and the mother of extreme cooking creativity. I will use what is in my cupboard, my tiny fridge and the veg I get from the discount vego shop.
