This simple and easy chili recipe can be made in one pot in a little over half an hour and with only a handful of pantry staple ingredients.

Vegetarian Skillet Chili
4 servings; 30 minutes
If you keep canned beans, tomatoes, onion and garlic in your pantry, you can make this dish on any weeknight without having to shop. The pickled onions aren’t strictly necessary, but they are simple to make and add a welcome tangy contrast to the beans. Pickled peppers are a fine substitute. If you have a bell pepper or jalapeño or two, chop them up and sauté them with the onions. And if you want to be fancy, grate the zest off the lime before juicing for the pickles, and stir it into the sour cream.
Ingredients
FOR THE PICKLED ONIONS:
1 lime
1 red onion or shallot, thinly sliced
Salt, as needed
Sugar, as needed
FOR THE CHILI:
Olive or grapeseed oil
1 large onion, chopped
3 garlic cloves, or to taste, minced
1 teaspoon chile powder
1 teaspoon dried oregano
2 (15-ounce) cans beans, drained
1 (15-ounce) can diced tomatoes
Salt, to taste
Fresh cilantro, diced avocado and sour cream, for garnish (optional)
Preparation
Make the pickled onions: Squeeze the lime juice into a bowl and add the onion or shallot, a large pinch of salt and a small pinch of sugar. Let rest for 20 minutes while you make the chili.
Heat a large skillet, then add the oil. When hot, add the onion and sauté until softened. Add the garlic, chile powder and oregano and sauté until fragrant. Add the beans and tomatoes and a few large pinches of salt and let simmer until the tomatoes break down, about 20 minutes.
Taste and add more salt, chile and/or oregano to taste. Serve with the pickled onion and any of the garnishes you like.

...from an unexpected source - my local five and dime. There can be some great deals to be had like these canned beans - a 19 oz. can for $1 compared to canned beans at my local grocers for $1.49/15 oz. can (national brand) to 69 cents/15 oz. can (store brand) which makes the latter priced comparatively. I was picking up a few other things and was glad to see these beans on the shelf (with no added sugar - thanks) which saved me another stop. All the seasonings, tomato juice and diced tomatoes are all available there too but not necessarily the brands shown above. Stroll through the food aisles, see what penny saving yet healthy foods you discover.

1 lg. onion, diced
1 - 28 oz. can tomatoes, diced with liquid
1 - 11.5 oz. can tomato juice
whisper of cayenne unless you like it fiery
1 T. oregano, dried
1 t. chili powder
2 t. smokey Spanish paprika
1 T. garlic powder
1 t. salt
1 - 19 oz. can each kidney - black - pinto beans with liquid
In a large fry pan, caramelize the onions. Transfer the onions to a large soup kettle. Add the tomatoes, tomato juice, cayenne, oregano, chili powder, Spanish paprika, garlic powder, salt, 3 cans of beans. Heat through to bubbling, serve up, and enjoy. Feel free to throw in cooked hamburger or cooked, diced left over roast if you’re motivated but this chili is great on it’s own - really.
