Tonight's incidentally vegetarian delight: some brown rice mujaddara, with some tzatziki-alike and an easy salad made with frozen broccoli. (Left to marinate with a garlicky olive oil-lemon juice dressing while the also garlicky cucumber-yogurt stuff rested in the fridge.)
Also on the side: a giant bottle of Cholula (one of two in a pack) and some mixed stuffed Haldiki olives, both of which Mr. C picked up at Costco. 😅 He sure does seem to be taking good advantage of that membership at the new store. I still need to go.
So easy and tasty, making instant pot mujaddara is a game changer. A healthy vegan dish you'll love eating, full of Middle Eastern flavor.
With the particular ingredients I was using tonight, that would have benefited from either about half a cup less water, or not soaking the stuff in advance and just giving it a couple extra minutes under pressure. (Probably just not soak next time, tbh.) Mine also needed more salt added at the end.
Turned out mushier than I would have preferred, but a pretty good base recipe. Very satisfying meal!
I didn't have as much onion to use as they were calling for, so we got less of the soft fried onion to add back on top at the end--so, there's also some commercial crispy fried onion and garlic to help make up for it.
Thinking about getting an instant pot
Open to opinions/suggestions, esp. as regards cooking for one
