An easy-to-make, flavorful, and hearty bean dish prepared in the Instant Pot. Ideal for an easy and wholesome dinner!
Ingredients: 1 cup dried beans any variety. 4 cups water. 1 onion, diced. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon paprika. 1/2 teaspoon chili powder. Salt and pepper to taste. 2 cups vegetable broth. 1 can 14 oz diced tomatoes, undrained. 1 bay leaf.
Instructions: Rinse the dried beans and pick out any debris. In the Instant Pot, combine beans, water, diced onion, minced garlic, cumin, paprika, chili powder, salt, and pepper. Pour in vegetable broth and add diced tomatoes with their juice. Toss in a bay leaf. Close the Instant Pot lid, set the valve to 'sealing,' and cook on high pressure for 40 minutes. Allow the pressure to naturally release for 15 minutes, then manually release any remaining pressure. Carefully open the lid, remove the bay leaf, and stir the beans. Adjust seasoning if needed. Serve hot and enjoy!
