Ingredients: 3 lbs pork shoulder, trimmed. 1 onion, chopped. 3 cloves garlic, minced. 1 cup chicken broth. 2 chipotle peppers in adobo sauce, minced. 1 tablespoon adobo sauce. 1 tablespoon ground cumin. 1 tablespoon dried oregano. Salt and pepper to taste.
Instructions: Place pork shoulder in the slow cooker. In a bowl, mix together onion, garlic, chicken broth, chipotle peppers, adobo sauce, cumin, oregano, salt, and pepper. Pour the mixture over the pork shoulder. Cover and cook on low for 8 hours or until the pork is tender and easily shreds with a fork.
