These vegan Fig Newtons don't need to be baked and are great for a snack or dessert. There are only 8 ingredients needed to make them, and they taste great with a sweet, chewy fig filling and an oat-almond crust.
Ingredients: 2 cups dried figs, stems removed. 1 cup rolled oats. 1/2 cup almonds. 1/4 cup maple syrup. 1/4 cup almond butter. 1 tsp vanilla extract. 1/2 tsp cinnamon. Pinch of salt.
Instructions: In a food processor, pulse the dried figs until they form a sticky paste. Add oats, almonds, maple syrup, almond butter, vanilla extract, cinnamon, and salt to the food processor with the fig paste. Pulse until all ingredients are well combined and form a sticky dough. Line a square baking dish with parchment paper, leaving some overhang for easy removal. Press the dough evenly into the baking dish, smoothing the top with a spatula. Refrigerate for at least 1 hour to set. Once set, lift the parchment paper to remove the fig mixture from the baking dish. Slice into bars or squares. Enjoy your homemade vegan Fig Newtons!
