"Tidy" chicken parm with sautéed mushrooms,onions, and white grapes.....it isn't the prettiest but it's yummmmmmyyyy
The Buffalo Mac and Cheese: E-Mix #1
Dun Dun Duuuuunnnnnnn! As promised I Have E-Mixed the infamous ( or maybe not) Buffalo Mac and Cheese from Buffalo Wild Wings. The recipe was pretty simple and it didn't take long to cook. Hope you guys enjoy it!!!
What You'll Need (makes 4, 10 oz servings):
1 tbsp sour ceam
1 tbsp cream cheese
1 tbsp butter
8 fl oz (1 cup) Half and Half
5 oz Cheddar cheese ( I used a cheddar cheese blend)
5 oz of Italian cheese blend (2 oz Mozzarella, 1 oz Asiago, 1 oz Parmesan, 1 oz Romano)
1 boneless skinless chicken breast
8 oz jumbo elbow macaroni
1/2 cup of Panko bread crumbs (optional)
4-6 oz of your favorite wing sauce
Salt (season to taste)
Pepper (season to taste)
Flour (optional for frying garnish)
The Details....
First, boil noodles until only slightly firm (al dente) and strain.
Preheat oven to 375 degrees Fahrenheit.
For the White Sauce:
1. Over medium heat add butter, sour cream and cream cheese to a saucepan, stirring until all three items are melted together.
2. Once butter, sour cream and cream cheese are melted slowly begin to add heavy cream. Stir occasionally to incorporate the butter mix into the cream and allow to come to a simmer.
3. Once the cream mix has reached a simmer, add 1 oz of cheddar cheese and 1 oz of Italian Cheese blend. (Add slowly and stir occasionally to keep a smooth consistency.)
4. Once cheese is evenly incorporated, add salt and pepper to taste. ( I also added a pinch of basil and oregano)
5. Add noodles to cream sauce and allow them to get fully covered in sauce.
6. Let sit until ready to add to baking dish(es).
For the Garnish and inner layer of chicken:
Inner layer
1. Using 1/2 the the chicken breast, add salt and pepper to taste and slow cook (in water or chicken stock, enough to cover the meat) on low to medium heat for approx. 30 minutes or until completely cooked.
2. Once chicken is cooked, shred into fine pieces and add enough wing sauce to coat all of the chicken.
Garnish (optional)
1. Cut the 1/2 of the chicken breast into 1/2 inch cubes, coat with flour, and fry at 375 degrees Fahrenheit until golden brown.
2. Allow chicken to cool and then toss in wing sauce.
Now the part you've all been waiting for!!! (lol)
1. In four 10 oz dishes, or a small baking dish, add noodles and cream sauce and top with a layer of cheese.
2. Add a layer of the shredded chicken and top with a layer of cheese.
3. Add a thin layer of Panko bread crumbs and sprinkle a little Mozzarella cheese.
4. Place on cookie sheet in oven, at 375 degrees Fahrenheit for 30 minutes or until top begins to slightly brown.
5. Remove from oven and add garnish, drizzle a little extra wing sauce over it....
and there you have it!!! Instant Happiness with a kick!!!
