Coconut aminos •1/8 c. rice wine vinegar •2 cloves of garlic, chopped •1/2 tbsp. fresh minced garlic •1/2 a red bell pepper & green bell pepper, sliced thin •1/4 large yellow onion, sliced thin •1/4 tsp. salt •1 package zucchini noodles •1 tbsp. sesame oil •Thai or Fresno chilis (optional) •1 green onion, sliced, if desired Directions: Combine coconut aminos, rice wine vinegar, garlic, salt, and ginger in a small bowl. Season shrimp with salt, pepper, and red chili flakes (optional) Heat sesame oil over medium high heat and add onions. Cook for about two minutes. Add vinegar combination and let it reduce and thicken, about one minute. Add shrimp (if raw) and allow to cook for about one minute before adding bell peppers, chilis, and zucchini noodles. Stir while letting cooking for a couple more minutes. Vegetables should still have a bite to them. Serve and garnish with sliced green onions.
