Ingredients: 2 cups shelled edamame. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1 cup coconut milk. 1 tablespoon olive oil. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Chop the onion and garlic and cook them in olive oil in a pot until the onion and garlic are soft. After you add the shelled edamame, cook for another two to three minutes. Add the vegetable broth and boil the whole thing. Turn down the heat and let it cook for 15 minutes. Blend the soup with an immersion blender until it is silky and smooth.
