Mumbai Style Egg Bhurji is a popular Indian street food made with scrambled eggs, onions, tomatoes, and spices. It's a delicious and spicy dish that can be enjoyed for breakfast or as a quick snack.
Ingredients: 4 eggs. 2 onions, finely chopped. 2 tomatoes, finely chopped. 2 green chilies, finely chopped. 1/2 teaspoon turmeric powder. 1/2 teaspoon red chili powder. 1/2 teaspoon cumin seeds. 2 tablespoons vegetable oil. Salt to taste. Fresh coriander leaves for garnish.
Instructions: Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and green chilies. Saut until onions turn golden brown. Add chopped tomatoes and cook until they become soft and mushy. Now, add turmeric powder, red chili powder, and salt. Mix well. Break the eggs into the pan and scramble them with the tomato-onion mixture. Cook until the eggs are fully cooked and mixed with the spices. Garnish with fresh coriander leaves. Serve hot with roti or pav bread rolls.
