Ingredients: 2 cups almond flour. 4 large eggs. 1/2 cup unsweetened almond milk. 1/4 tsp sea salt. 1/4 tsp baking soda. 1 tbsp coconut oil for cooking.
Instructions: In a mixing bowl, combine almond flour, eggs, almond milk, sea salt, and baking soda. Mix until you have a smooth batter. Heat a non-stick skillet over medium heat and add a little coconut oil to grease it. Pour a small amount of the batter into the skillet, swirling it around to create a thin crepe or tortilla. Cook for about 2 minutes or until the edges start to lift. Carefully flip the crepe/tortilla and cook for another 1-2 minutes until both sides are lightly golden brown. Repeat the process with the remaining batter, adding more coconut oil to the skillet as needed. Serve your Paleo crepes or tortillas with your favorite fillings like scrambled eggs, avocado, and veggies for a delicious and nutritious meal.
