Ingredients: 1 block firm tofu, crumbled. 1 tablespoon olive oil. 1/2 onion, diced. 1 bell pepper, diced. 1 cup mushrooms, sliced. 1/2 cup spinach, chopped. 2 cloves garlic, minced. 2 tablespoons nutritional yeast. 1/2 teaspoon turmeric. Salt and pepper to taste.
Instructions: Heat olive oil in a skillet over medium heat. Add diced onion and saut until translucent. Add bell pepper, mushrooms, and garlic. Cook until vegetables are tender. Add crumbled tofu, nutritional yeast, turmeric, salt, and pepper. Stir well to combine. Cook for another 5-7 minutes, stirring occasionally, until tofu is heated through and slightly browned.
