Ingredients: 6 hard-boiled eggs, peeled. 1 pound ground pork sausage. 1/2 cup breadcrumbs. 1 teaspoon dried sage. 1/2 teaspoon black pepper. 1/4 teaspoon salt. 1/4 teaspoon smoked paprika. Wood chips for smoking.
Instructions: Preheat your smoker to 225F 107C. In a bowl, mix ground pork sausage, breadcrumbs, dried sage, black pepper, salt, and smoked paprika until well combined. Divide the sausage mixture into 6 equal portions. Flatten each portion and wrap it around a peeled hard-boiled egg, ensuring the egg is completely covered. Place the wrapped eggs on a tray and refrigerate for 30 minutes to firm up the sausage coating. Prepare the smoker with wood chips of your choice. Place the wrapped eggs on the smoker rack and smoke at 225F 107C for 1.5 to 2 hours or until the sausage is fully cooked and has a nice smoky flavor. Remove the smoked Scotch eggs from the smoker and let them rest for a few minutes before slicing and serving.
