A classic sandwich with toasted bread slices and a creamy egg mayo mixture. It's great for a quick and filling meal.

Ingredients: 4 slices of bread. 4 hard-boiled eggs, chopped. 1/4 cup mayonnaise. 1 tablespoon Dijon mustard. Salt and pepper to taste. Lettuce leaves optional. Tomato slices optional.

Instructions: In a bowl, mix chopped hard-boiled eggs with mayonnaise and Dijon mustard. Season with salt and pepper to taste. Toast the bread slices until golden brown. Spread the egg mayo mixture evenly onto two bread slices. If desired, add lettuce leaves and tomato slices on top of the egg mixture. Top with the remaining bread slices to make sandwiches. Cut sandwiches diagonally and serve.

Cook Time: 5 minutes
