These vegan eggnog cookies taste like Christmas and are soft and chewy. These are great for holiday parties or any time you want a sweet treat with a hint of eggnog spice.
Ingredients: 2 cups all-purpose flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup vegan butter, softened. 3/4 cup granulated sugar. 1/4 cup unsweetened applesauce. 1/4 cup vegan eggnog. 1 tsp vanilla extract. 1/2 tsp ground nutmeg. 1/2 tsp ground cinnamon. 1/4 tsp ground cloves.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, nutmeg, cinnamon, and cloves. In a large mixing bowl, cream together the vegan butter and sugar until light and fluffy. Add the applesauce, vegan eggnog, and vanilla extract to the butter-sugar mixture, and mix until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon or fork. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
