Maillard Reaction happening. Browned Elk Roast that was marinated in olive oil, worcestershire sauce, cracked pepper, merlot infused salt, rosemary infused salt, fresh rosemary, garlic cloves, and red wine pictured. Added 1 cup of the wine to the cast iron skillet as it roasts to an internal temp of 130 for medium-rare. Because this is what I do. 😁
