Pretense
Part of the reason Ursula has so much pretense is because her father was the same way. Ursula saw her father one way, the true man he was (or so she thought until recently) but then she would see him with other people and he would be different. He’s the person she learned it from: how to put up walls to guard.
Order
Ursula loves to have control of situations. Being a woman, she doesn’t get the chance often, but when she is able, she takes control of any situation she is able, making sure she knows exactly what’s going on. That means no chaos. Order is compulsory for her, something that calms her down even when that seems impossible.
