These lovely stained-glass cookies are inspired by the enchanted rose from Beauty and the Beast. In the oven, hard candy melts to create a colorful'stained glass' effect, making them not only delicious but also visually stunning.
Ingredients: 2 1/4 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 3/4 cup unsalted butter, softened. 3/4 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. Hard candies in assorted colors. Edible glitter optional.
Instructions: Mix the flour, baking powder, and salt together in a bowl with a whisk. Melt the butter and mix it with the sugar in a different large bowl. Beat the mixture until it is smooth and creamy. Mix the butter and vanilla extract together well after adding the egg. Slowly add the dry flour mixture to the wet mixture and mix just until everything is combined. Do not mix too much. Cut the dough in half, then roll each half into a disc and wrap it in plastic wrap. At least one to two hours, or until firm, put in the fridge. Warm the oven up to 350F 175C and put parchment paper on baking sheets. Put the hard candies in separate plastic bags and use a rolling pin or mallet to break them up into small pieces while the oven heats up. One piece of the chilled dough should be rolled out to about 1/4 inch thick on a lightly floured surface. Choose any cookie cutter you like, like a rose shape, and use it to cut out the main shapes of the cookies. Then, put them on the baking sheets that have been prepared, leaving some space between them. Cut out a shape from the middle of each cookie with a smaller cookie cutter. This is the window with "stained glass." Carefully put crushed hard candies into the hole in the middle of each cookie. You can use one color or a mix of colors to make it look like stained glass. If you want the crushed candies to sparkle even more, you can sprinkle edible glitter on top of them. After the oven is hot, bake the cookies for 8 to 10 minutes, or until the edges are just beginning to turn golden and the candy is melted and bubbling. Pick up the cookies from the oven and let them cool for a while on the baking sheets. This will let the candy harden in the middle. Carefully take the cookies off the baking sheets and place them on wire racks to cool completely once the candy is completely cool and hard. Put the stained glass cookies in a container that won't let air in and put parchment paper between the layers to keep them from sticking.
