You can serve these loaded little potatoes with any meal. The toppings give them a burst of flavor, and the slow cooker makes them very tender.
Ingredients: 1.5 lbs mini potatoes. 1 cup shredded cheddar cheese. 4 slices bacon, cooked and crumbled. 1/4 cup chopped green onions. 1/2 cup sour cream. 1/4 cup chopped fresh parsley. Salt and pepper to taste.
Instructions: Wash the mini potatoes thoroughly and place them in the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the potatoes are tender. Once cooked, carefully remove the potatoes from the slow cooker and place them on a serving platter. Top the potatoes with shredded cheddar cheese, cooked and crumbled bacon, chopped green onions, sour cream, and chopped fresh parsley. Season with salt and pepper to taste. Serve hot and enjoy!
