Hello, Phati Sari, I am wandering about the wills Arnav made. I believe the first left everything to Anjali. Correct? What were the stipulations for the second one? Why did Khushi feel it was her fault Shyam kidnapped Arnav if the second one was made? Also why would Khushi need a Dhaba service to be financially independent if she was Arnav’s widow? It inferred that he changed his will after remarriage. Thank you.

I believe the first left everything to Anjali. Correct? Yep, Arnav changed his will such that Anjali was the sole executor and sole beneficiary.

To prevent Khushi from understanding his ploy, Shyam gave her decoy papers and then swapped them out with the new will right before Arnav signed them. Khushi even read the documents before giving them to Arnav, trying to make sure she wasn’t giving him anything dangerous.
(Fun fact: the documents Khushi takes a photo of in Episode 251 are actually the originals naming Anjali.)
Arnav, however, had left another copy of his will with his lawyer (Mr Roy) that had a clause about everything going into trust if he dies in suspicious circumstances (Episode 272). Then in Episode 286, Shyam tells Khushi that he wanted to kill Arnav as soon as he grabbed him from the airport, but the will granted him fifteen days of life -- indicating that the clause was about dying in suspicious circumstances within fourteen days of signing a new will. This is how we know Arnav was kidnapped for fifteen days in total.
Why did Khushi feel it was her fault Shyam kidnapped Arnav if the second one was made? Because it was. Because it gave Shyam complete control over what happened to Arnav’s wealth if he died. There’s a scene in Episode 283 that explains all of this. Khushi and NK find the soft-copy on Shyam’s pendrive, and Khushi compares it to what she tricked Arnav into signing. She realises she was (unknowingly) complicit in the plan.
Also why would Khushi need a Dhaba service to be financially independent if she was Arnav’s widow? Clearly he wasn’t planning on leaving her with a single dime of his hard earned money. I don’t know anon. These lines were added when the writers thought they were going to kill Arnav off when Sobti left, I have no desire to attribute meaning to them given that Arnav didn’t die in the canon and it’s just a loose thread now.
