Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup cocoa powder. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup brewed espresso, cooled. 1/4 cup unsweetened almond milk. 1/4 cup vegetable oil. 1 tsp vanilla extract. 1/2 tsp white vinegar. For the Glaze:. 1 cup powdered sugar. 2 tbsp brewed espresso, cooled. 1/2 tsp vanilla extract. 1/4 tsp salt. Vegan chocolate chips or sprinkles optional.
Instructions: Set the oven temperature to 350 degrees Fahrenheit 175 degrees Celsius and coat a donut pan or line a baking sheet with parchment paper. Mix the flour, sugar, baking soda, cocoa powder, baking powder, and salt in a big bowl. The brewed espresso, almond milk, vegetable oil, vanilla extract, and white vinegar should all be combined in a separate bowl. Mixing until just combined, pour the wet ingredients into the dry ingredients. Take care not to overmix; some lumps are acceptable. Transfer the batter into a donut pan or pipe it onto the baking sheet in the shape of donuts using a piping bag. A toothpick inserted into a donut should come out clean after baking for 12 to 15 minutes in a preheated oven or 10 to 12 minutes in a baking sheet. Make the glaze while the donuts are cooling. Mix the powdered sugar, brewed espresso, vanilla extract, and salt in a small bowl until well combined. After the donuts cool slightly, you can either dip them into the glaze or cover them with it.
