Being one of the many saviors of the galaxy had its perks, but it also had its downsides, and since he had been the one to "kill" the Emperor - truly, Darth Vader did, but Luke was going to milk this as much as he could, as he was the only one to leave the room - he was the one that Leia approached. Being the last Jedi of a mostly-dead order... meant taking chances when opportunities presented themselves. And it wasn't as if Luke had been seeing anyone to prevent such a union.

It hadn't taken much convincing for the Jedi. He knew it was in the best interest for everyone that Eris and him be married, that Inuja's powerful Force Nexus was protected by the very last Jedi who was desperate to build his order.
After all, the Force was pulsing within him, drawing him to Inuja, a low, dense hum that felt more akin to a moth being drawn to a bonfire, and he knew that it was wise to go to the planet and meet this royal.
Eris. Her name bespoke of a kind heart. Her deeds, too, of how she had done all she could for the children and all people of the planet -
And as he climbs out of his X-Wing, covered head to toe in his orange pilot's gear, he realizes that her name speaks also of an absolutely kind face, one that makes the stars burning around the planet pale in comparison to her through beauty alone. Eris Winslow. An angel. One he was meant to wed.
Luke's mouth waters as he finally reaches the bottom of the ladder of his beloved X-Wing, and Artoo is removed from the starship with a few purrs and hisses from the docking bay's crane. Blue eyes look sheepishly from the light grey flooring, dancing everywhere but her countenance. He takes off his helmet and pops it under his arm.
The Force pulses dizzyingly around him, but especially around her. He feels like he's being plucked from his body and thrown elsewhere, like gravity has stopped working, like he's standing on Endor celebrating with everyone in the Rebellion after the Empire's defeat. He's where he is meant to be.
When he finally looks to Eris, Skywalker offers a smile: one that betrays his intentions, that he finds her beautiful, a star bound in human flesh.
"Greetings," he says, "I am Luke Skywalker, Grand Master of the New Jedi Order. General - Chancellor, pardon me, getting used to the shift with the New Republic - Leia Organa sent me here. It is lovely to meet you."
The Jedi bows before her, takes her hand in his, and presses his lips to her knuckles, all while ignoring how his heart pounds inside his chest.
