Japanese Curry without curry blocks?! Sounds impossible right? Not at all. This dish is great for people that are unsure how they feel about curry. It’s sweet, super mild, and just exotic enough. Most people make Japanese curry with blocks, this is shit. It’s loaded with MSG, Sodium, additives, preservatives, and food coloring. You can use the protein of your choice but I recommend grass-fed beef tips.

Start with the roux. This will thicken up the sauce and add the flavor, basically it is replacing those yucky blocks. Pro-tip, you can make this is bulk and store in the fridge for 3-5 months so you can have simple fast curry anytime you want. Any roux is equal parts flour to butter, 3 tbs of each is enough for one batch of curry (serves 4). In a saucepan on medium heat, add 3 tbs of butter, when melted stir in 3 tbs of flour. Keep stirring and keep an eye out because this can burn very easily. after about 15 minutes add 1 tbs of curry powder, 1 tbs Garam Masala, 1tbs chili powder, and 1/4 tsp cumin. Stir Stir Stir. Keep this going until a thick paste starts to form, take it off the heat it will continue to thicken as it cools). You can add more flour if its not thickening up properly.

On to the meat! In a heavy pot add 1 tbs of olive oil over medium heat, add in your beef tips, salt and pepper. We are not looking to cook these through just get a nice sear happening, deglaze the pan by adding in 1/2 dry red wine. Once most the alcohol evaporates remove the meat from the pan. Into the same pan add in skinned and diced Yukon gold potatoes (3) and a skinned and diced apple (sweet variety) and 2 diced carrots. You can put half a sweet onion in as well if you like them. After a few minutes add in 2 cloves of garlic and 1 tsp of ginger.  Let that cook for another minute then add the meat back into the pot. Cover with chicken broth about 4 cups or so all ingredients are submerged. Bring to a slow boil and then add 3 tbs of the roux. Stir and put the the lid on and cook on low for about an hour. Stir every 30 minutes. Once the sauce is reduced by half, is thicc, and velvety it’t time to eat. 

Server over white rice. Simple way to remember how to cook rice 2:1 ratio Water:Rice. Rinse rice for 3 minutes under cool water then add to pot and cook.
