More than once, Gaster has thought about trying to fill in for one of his missing alternates, just to regain a taste of normalcy. He’s done it too, to varying success. He feels like a liar and a fraud and hates that, but getting a taste of love and acceptance from versions of those he was once close to is something he wants so desperately that he keeps doing it.

It had to happen eventually.
Not all the timelines Gaster entered could be happy, cheery, and bursting with people. He had seen timelines where the Underground had been laid to waste, where everything was coated in a layer of dust, and that was upsetting enough, but this was far worse.
He could hear the screams of dying monsters echoing through the tunnels of Waterfall. Behind him hid an alcove of denizens. This wasn’t his home, but he had made them a promise to find a safe way out, somewhere in Hotland or Snowdin where the danger might pass. The human never backtracked, right? He would find the way. He would.
He did. Water soaked his clothes as he ran, an unseen shadow in dark clothes passing through dark tunnels. He had heard Undyne’s shrieks of wrath, her final, fading cries. He went unseen.
He was too late. The alcove where he had promised certain safety was empty. The walls were smeared with dust; a broken bottle, a weak defense, bobbed in the water. Inaction or intervention, it didn’t matter. He had tried, and he couldn’t save them. He knew genocides happened. Why did he think his presence would have any impact? Why did he think he could stop this? When would he learn that he couldn’t save anyone? He could never save anyone. He was always too late.
Cold water gathered at the corners of his sockets, and he shivered as he felt his tears pour down both the inside and outside of his face. He could never save anyone. Sinking to his knees, he keened, and he cried, cried, cried.
what would completely break your character?
Calling them out on their ethical transgressions. Gaster knows what they did wrong and to have others shame them for it and rub it in breaks their heart.

“In my timeline, people weren’t always so happy with the King... When he announced his vendetta against humanity, those who found him abominable left for the Ruins. It was a difficult time for everyone; I lived through it. But... in nearly every timeline I’ve seen since, he’s adored. It warms my soul. For all he’s suffered, he deserves the love.“
Dvd commentary meme: "Gaster makes a small noise, almost a scoff, almost a laugh, but softer than either. He tried. If nothing else could be said, that much is true, for what little it was worth.“Thank you,” he signs. Her fondness is worth something, if nothing else. It’s nice to have affection shared in turn. He’s still for several moments."
Now this, this is an interesting moment because the narration here alludes to a lot of backstory that hasn’t been revealed in much detail yet. Gaster’s current situation, the way he flickers between universes and timelines, is a direct consequence of his own experimentation. He knowingly crossed more than a few ethical lines and betrayed his own morals during these efforts, but it was very much a matter of the ends justify the means; he was willing to take on the guilt if he could succeed. But he failed.
Now, not only does he bear the guilt over people he’s hurt, but he suffers with the knowledge that they were hurt in a failed endeavor; it was all for nothing. On top of this, he continues to exist in a half-life completely cut off from home, as if further punishment. So, after all this, to be told that he is a monster that tries, as if it’s a good thing, is painfully ironic. He is very aware that if he never tried he might not ever be in this mess. Yet, there’s nothing to do but laugh at it. He can’t do anything else.
However, he also knows Pho has no idea of her accidental implications. He knows she means well, and he has been long starved for affection in his multiverse travels, so he appreciates the intent. But then his mind wanders and he gets to thinking of humans and the word monster and how things have changed, which leads into the subject shift.
