Ingredients: 150g shortcrust pastry. 200g mango puree. 100g passion fruit puree. 100g coconut milk. 3 eggs. 100g sugar. 50g butter. Zest of 1 lime.
Instructions: Preheat the oven to 180C 350F. Roll out the shortcrust pastry and line a tart mold with it. Prick the base with a fork. In a bowl, whisk together the mango puree, passion fruit puree, coconut milk, eggs, sugar, and lime zest. Melt the butter and mix it into the filling mixture. Pour the filling mixture into the tart shell. Bake in the preheated oven for 30-35 minutes, or until the filling is set and golden brown on top. Allow the tart to cool before slicing and serving.
