Ingredients: 4 cod fillets. Salt and pepper to taste. 2 tablespoons olive oil. 3 cloves garlic, minced. 1/2 cup white wine. 1 can 14 ounces diced tomatoes, drained. 1/4 cup fresh basil leaves, chopped. 2 tablespoons butter. 1 tablespoon lemon juice. Fresh basil leaves for garnish.
Instructions: On both sides, season the cod fillets with salt and pepper. Put olive oil in a big skillet and heat it over medium-high heat. Put the cod fillets in the pan and cook them for four to five minutes on each side, until they are golden brown and done. Take it out of the pan and set it aside. Add minced garlic to the same pan and cook for about one minute, until the garlic smells good. Add the white wine and let it cook for two to three minutes, until it gets a little less thick. Toss in the chopped basil leaves and tomato dice. For another two to three minutes, cook. Stir the sauce with the lemon juice and butter until the butter melts and the sauce is well mixed. Add the cooked cod fillets back to the pan and cover them with the sauce. Add one more minute of cooking to heat everything through. Cover the pan-seared cod with the white wine tomato basil sauce. Add fresh basil leaves on top of the sauce. Have fun!

If you want the salmon to be fully cooked and have a nice char, grill it for about 4 to 5 minutes on each side. Baste it with the glaze as you go.
