Zoodlelicious al Pomodoro
A super healthy, low carb and vegan dish. Pretty easy to make and not too intricate with basic ingredients you probably have at home.

2 large Zucchini
2 large tomatoes (each about 200g)
1 medium onion
3 garlic cloves
fresh basil
spices (dried Italian herbs, pepper, salt, paprika powder)
1 tsp. olive oil
almond slices as topping (could be substituted with pine nuts)
Use a zoodle maker/slicer and prepare the 2 washed zucchini
Transform it into angel hair
Set aside
Put a small pot on the stove. On medium heat, add the olive oil and then the peeled onion (cut in stripes) and the garlic (minced). Cut the tomatoes into small cubes and add when the onion and the garlic are halfway fried. Add the spices and let it simmer on low for 15 minutes. Add the basil towards the last 2 minutes. You can add some starch if you prefer a thicker sauce, also some sugar is optional.
Take a large pot and fill it up with water (3/4th). Bring it to a boil. Add all of the zucchini angel hair and let it boil for 3 to 5 minutes depending which texture you prefer (al dente?).
One way would be to add the zucchini into the ‘Pomodoro sauce’ in order to coat it. I simply drained the zucchini, added it on the plate and put the sauce around it. Top it off with almonds and fresh basil.
