These RAW vegan falafel wraps taste great and are very fresh. They make a filling and healthy meal because they are full of healthy ingredients and flavors that come from the Mediterranean.
Ingredients: 2 cups sprouted chickpeas. 1 cup sunflower seeds. 1/2 cup chopped parsley. 1/4 cup chopped cilantro. 1/4 cup chopped red onion. 2 cloves garlic, minced. 2 tablespoons lemon juice. 2 tablespoons tahini. 1 teaspoon ground cumin. 1/2 teaspoon ground coriander. 1/4 teaspoon cayenne pepper. Salt to taste. Lettuce leaves. Thinly sliced cucumber. Thinly sliced tomato. Thinly sliced red bell pepper. Thinly sliced avocado.
Instructions: Sprouting chickpeas, sunflower seeds, parsley, cilantro, red onion, garlic, lemon juice, tahini, cumin, coriander, cayenne pepper, and salt should all be put in a food processor. Once everything is well mixed, press the mixture together with your fingers to make it stick together. You can add some water if it's too dry. Place a big lettuce leaf on the ground and put a scoop of the falafel mixture in the middle of it. Apple, tomato, red bell pepper, and avocado slices should be put on top. Like a burrito, fill the lettuce leaf with food and wrap it up. Do it again with the rest of the ingredients. You can serve it right away or put it in the fridge to eat later.
