If you’re looking to up your carrot game this holiday season look no further than these absolutely stunning roasted carrots. They’re a show stopper. Ingredients Yogurt Sauce 1 cup Greek yogurt Juice ½ lemon 1 garlic clove minced 1 tsp honey Cilantro Oil 1 cup cilantro 1 cup olive oil Salt and pepper to taste Carrots 1 bunch carrots 1 cup olive oil 1 tsp cumin ½ tsp cinnamon ½ tsp nutmeg 1 tsp honey Salt and pepper 1 cup pomegranate seeds 1 lemon zest Instructions Preheat oven to 425 Combine 1 cup Greek yogurt, juice of ½ lemon, 1 garlic clove minced, and 1 tsp honey. Cover and set aside. Combine 1 cup cilantro and 1 cup olive oil in blender and blend until smooth. Set aside. Toss carrots with 1 cup olive oil, 1 tsp cumin, ½ tsp cinnamon, ½ tsp nutmeg, 1 tsp honey, salt and pepper. Place carrots on baking sheet and cook for 30 – 40 minutes or until fork tender and slightly charred. To serve place carrots on tray. Top with yogurt sauce, coriander oil, pomegranate seeds, and lemon zest. Finish with freshly cracked black pepper and flaky sea salt. Thanks for having me on @ctvmorningliveatlantic.
