Favorite tasty vegetable dishes?

Like a ton of other people, one of my resolutions is Eat More Vegetables.  So I’m asking you fine folks:  

Anyone have any favorite veggie dishes/recipe they want to share?

I’m back from my trip to Japan, trying to stay up so that I don’t have jet-lag tomorrow (hubby succumbed to sleep already). I had a really wonderful time in Tokyo, Osaka and Kyoto :)

Also, I managed to tape a Three Patch Podcast segment on Sherstrade while I was in Kyoto (on a wifi wing and a prayer). It was a terrific way to meet others in the fandom and I can’t wait to see how it all turns out.

I don't remember the last time I read something. I'm not writing because I have no drive to and my mind is elsewhere. Nothing Glee related is making me excited (except for that Halloween scene before which was hysterical) and especially not Darren for some obscure reason...

Maybe it's a product of other things but I'm not used to not being excited about it all and not visiting tumblr every day. I've barely logged on in nearly a week...

Deary me...! What is going on? Maybe tomorrow's episode will sort me out.
