In a mood to make more niche Fate headcanon.
In FGO's London Singularity (still not good even after re-reading it years later), it is explained that, in this timeline, the grandchild of Victor Frankenstein (also called "Victor") was in London in 1888 and had kept Fran in a coffin. Which of course doesn't make much sense with how Victor dies at the end of the novel childless.
But you know which Frankenstein survived the events of the novel? Ernest Frankenstein, Victor's other little brother besides William, who is only scarcely mentioned throughout the novel. Last time we hear of him, he is 16 and wants to join the foreign service (i.e. become a Swiss mercenary).
From it I think you can recreate the same situation without completely retconing the original story. Say Ernest became a mercenary as he wished, probably during the entire length of the French Revolutionary Wars/Napoleonic Wars, let's say on the British side. During his service or perhaps after when the wars cease in 1815, something like around 20 years after the events of the novel (Frankenstein's chronology is extremely inconsistent, all we can say is that it was probably in the 1790s), he coincidentally meets Captain Robert Walton and befriend him, and Walton, realizing who he is, decides that he can't in good conscience not tell him what actually happened to his family and tell him.
Ernest then spends the first half of the 19th century joining the various Northwest Passage expeditions in hopes of finding the corpse of the Creature and he eventually succeeds. It doesn't matter if he only gets one part of her, Blasted Tree, and more broadly galvanism, ensures that it "is possible [...] to give birth to a second Frankenstein's Monster". In any case, Ernest takes whatever remains with him back to London where he settles down and gets married, keeping the "family legacy" in a coffin. Then eventually his grandson, named Victor in honor of his brother, also becomes a scientist and manage to recreate the Creature and even revive her, only to keep her asleep in that coffin.
No idea where he got Mephistopheles though.
(Why would Ernest retrieve Fran? Good question. If he wanted revenge, the killer of his family already killed herself. Maybe it's more complicated than that? He wanted to honor the memory of the brilliant scientist his brother was and also, because he got to hear both sides from Walton, in some weird fashion he decided to give Victor's "daughter" a proper burial.)
