Fat Jacks BBQ in Monona, WI
I stopped in one afternoon to visit Owner/Operator Dan Baryenbruch of Fat Jacks BBQ in Monona, Wisconsin. Dan has been around the restaurant business all his life and Fat Jacks is named after his father...in somewhat of a ribbing sort of way.
The walls of Fat Jacks are an agglomeration of University of Wisconsin bric-a-brac, old fishing gear, golf miscellany and local odds and ends. Dan is an avid outdoorsman and I found it ironic that he has to refrain from putting up much hunting paraphernalia - in a barbecue restaurant - because of the "liberals in Madison". I'm pretty sure that in some parts of Texas, you can not receive a business license to open a barbecue restaurant unless you have at least a small herd mounted on the walls.
Dan puts a dash of his 20 ingredient citrus glaze on just about all of the meats right after they come out of the smoker. I recommend trying the pork sandwich with spicy barbecue sauce, but the roasted chicken was pretty good too.
