While exploring Rhode Island we stumbled upon this little gem of a place: the Shanty. Great little restaurant bar with a diverse menu and service reminiscent of a home town feel that made even us Georgians feel welcome. We went to the Friends of Refugees at the Atlanta Botanical Gardens last weekend and was inspired to attempt some of the recipes. So I made a tabouli with couscous, green tomatoes and red peppers. I then stir fried it in olive oil to make the stuffing. We made meatballs with ground sirloin, pork, oregano, robust Gouda, bread crumbs, and salt and pepper and baked at 375F. I made a sauce with lemon Greek yogurt, avocado, dill, turmeric, salt and pepper and an emulsion blender. Stuffed the odd assortment into a pan fried pita. So our frog catching adventure yielded 7 frogs. I made a terrarium out of a Tupperware and a bottle cap and a cork. I poked the holes in it by heating up an ice pick to not crack the plastic. We placed moss and water in the bottom of the container.
