Recipe Below!! π Chicken Scallopini in a Lemon Garlic Cream Sauce w/ Parmesan Zucchini Chips & Roasted Potatoes __ Pounding the chicken thin is both therapeutic and important to get the consistency just right! Picky kiddo approved: chicken, no sauce, the zuchinni chips were "eh, ok" and the potatoes were alright. π€€ππ __ π§π₯©π₯¦ Ingredients π₯¦π₯©π§ 3 gold potatoes 2 zucchini 1/2 cup grated parmesan 1/2 cup garlic bread crumbs 2 bunches green onions 2 lemons 6 cloves garlic 4 chicken breasts, boneless, skinless 2 TBSP chicken stock concentrate 4 TBSP sour cream olive oil 1/2 cup + 1 tsp flour salt & pepper (or house seasoning) 2 TBSP butter __ βπͺ Instructions πͺβ π Preheat oven to 450 degrees. Dice potatoes into Β½-inch pieces. Slice zucchini into 1/4" thick rounds, place in a ziploc bag w/ a splash of olive oil. Thinly slice scallions, separating whites from greens. Peel & chop garlic. Zest & quarter lemon. π Toss potatoes on a baking sheet w/ a drizzle of olive oil, s&p. Add breadcrumbs, parmesan & s&p to zucchini, shake to coat, then place on a separate sheet single file. Roast until browned & tender, 20-25 minutes (flip zucchini halfway through). π Meanwhile, place chicken between 2 large pieces of plastic wrap. Pound out until chicken is about Β½ inch thick. Season all over with s&p, then sprinkle with 1/2 cup flour to evenly coat both sides. π Heat a large drizzle olive oil in a large pan over medium-high heat. Add chicken; cook until browned on first side, 4-5 minutes. Flip & add more olive oil. Cook until crust is browned + chicken is cooked through, 4-5 minutes. Transfer to a plate. π Heat a large drizzle olive oil in same pan over medium heat. Add scallion whites, garlic & 1 tsp flour; cook, stirring, 2 minutes. Add 1/3 cup water, stock concentrate & a squeeze of lemon juice. Cook, stirring occasionally, until slightly thickened, 1-2 minutes. Remove from heat; whisk in sour cream, lemon zest & 2 TBSP butter. If sauce seems too thick, add a splash of water. Season w/ pepper. π Top chicken w/ sauce & garnish w/ scallion greens.
