This vegan twist on the classic fennel and orange sugared brioche is a delightful treat for any time of day. The aromatic flavors of fennel and orange meld beautifully with the soft and fluffy texture of the brioche.
Ingredients: 1 cup almond milk. 1/4 cup vegan butter, melted. 1/4 cup maple syrup. 1 tablespoon active dry yeast. 3 1/2 cups all-purpose flour. 1/4 teaspoon salt. 1 teaspoon fennel seeds. Zest of 1 orange. 1/2 cup powdered sugar. 2 tablespoons orange juice.
Instructions: In a small saucepan, heat the almond milk until it's just warm. Warm almond milk, melted vegan butter, maple syrup, and active dry yeast should all be mixed together in a large bowl. Wait five minutes until it foams up. To the yeast mix, add the flour, salt, fennel seeds, and orange zest. Mix until you get a dough. For five to seven minutes, knead the dough on a floured surface until it is smooth and springy. Cover the dough with a clean towel and set it in a greased bowl. Let it rise in a warm place for about an hour, or until it goes double in size. Set the oven to 350F 175C and heat it up. The dough has risen. Punch it down and form it into balls or any other shape you want. Put them on a baking sheet that has parchment paper on it. After the oven is hot, bake for 20 to 25 minutes, or until golden brown. To make the glaze, mix powdered sugar and orange juice in a small bowl. Brush the glaze over the warm brioche after it's done baking. Enjoy while still warm!
