Ingredients: 2 large sweet potatoes, peeled and cut into matchsticks. 2 tablespoons olive oil. 1 teaspoon chili powder. 1/2 teaspoon paprika. 1/2 teaspoon cumin. Salt and pepper to taste. 8 small taco-sized tortillas. 1 cup black beans, cooked and drained. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup shredded cheddar cheese. 1/4 cup sour cream. 1/4 cup fresh cilantro leaves. Lime wedges for serving.
Instructions: Turn on your oven and heat it up to 425F 220C. Mix the sweet potato sticks with chili powder, paprika, cumin, salt, and pepper in a large bowl until they are well covered. Place the seasoned sweet potatoes in a single layer on a baking sheet. Bake for 20 to 25 minutes, flipping them over once, until they are golden brown and crispy. Follow the directions on the package to warm the tortillas in a dry skillet or microwave while the sweet potatoes are baking. To put the tacos together, put some crispy sweet potatoes and a spoonful of black beans on each tortilla. Diced tomatoes, red onion, lettuce, and cheddar cheese should be put on top. Put sour cream on top and add fresh cilantro leaves for decoration. Use the lime wedges to squeeze over the crispy sweet potato tacos when you serve them.
