Fermenting Pico de Gallo. Did you see this morning s post where I made a big bowl of this? Then our good friend Melanie at @roadtothefarm chimed in on the FB post and asked if I have ever fermented it. Well I responded that I have always wanted to, and I've read about doing it, but I never have. So here I am all motivated lol. And of course using all my favorite @masontops products to get it done. I have become very comfortable with fermenting. Trust how it looks. Trust my nose. Trust how it tastes. I am pumped about trying this in about a week and then maybe later after that. Since I already salted the Pico this morning alot of juice / brine was naturally formed. So I poured off some of that ... Added about 1/2 TBS of @realsaltlake salt then packed in the Pico!
