It is with much anticipation and excitement that we announce our next event in conjunction with @thefermentary – Stinky & Sticky will feature acclaimed, world-renowned author, food writer and Fermentation Revivalist, Sandor Katz @sandorkraut. A fun-filled, thought-provoking afternoon of debate and discussion hosted by food writer Dani Vallent @danivalent and with a panel that consists of some our greatest food talents, Australia's Fermentation expert, Sharon Flynn @sharon_flynn, award-winning chef and Cooks Co-op founder, Martin Boetz @martinboetz and the legendary chef, writer and TV host, Tony Tan @tonytan53 and rising star HarryMangat @bijidining. Join in with this impressive panel whilst we talk about the importance of conserving our preservation culture with an intriguing focus on some of the lesser-known Chinese preservation practices, some of which have been sadly industrialised, we also throw the spotlight on Thai cooking, a cuisine whereby preservation has been less recognised, onto a well-needed consideration of the processes through which we can preserve and embed recipes and rituals in our future culture.
