Ingredients: 2 egg whites. 1/4 cup granulated sugar. 1 cup powdered sugar. 3/4 cup almond flour. 1/4 teaspoon vanilla extract. Pink food coloring. Cotton candy flavored filling. Cake cones. Sprinkles for decoration.
Instructions: Preheat your oven to 300F 150C and line a baking sheet with parchment paper. In a mixing bowl, beat the egg whites until they form stiff peaks. Gradually add the granulated sugar and continue to beat until the mixture is glossy and forms stiff peaks again. Sift the powdered sugar and almond flour into the egg white mixture. Gently fold it in until the batter is smooth and well combined. Add the vanilla extract and a few drops of pink food coloring to achieve the desired color. Fold them in until the color is even. Transfer the macaron batter into a piping bag fitted with a round tip. Pipe small macaron shells onto the prepared baking sheet. Leave some space between them as they will spread slightly. Tap the baking sheet on the counter a few times to remove any air bubbles. Let the macarons sit at room temperature for about 30 minutes until a skin forms on the surface. Bake the macarons in the preheated oven for 15-18 minutes or until they are set and have developed feet. Remove the macarons from the oven and let them cool completely on the baking sheet. Once the macarons are cool, spread some cotton candy flavored filling onto the flat side of one macaron shell and sandwich it with another shell. Roll the edges of the macarons in colorful sprinkles for decoration. Serve the cotton candy macarons in cake cones and enjoy!
