2 celery stalks, roughly chopped
1 large carrot, roughly chopped
2 bay leaves
Water 3000ml (or more)
2 teaspoon Brandy
salt and pepper to taste
1. Preheat the oven to 230C. Rinse the oxtail and bake for 20mins until golden brown.
2. Add 1 teaspoon olive oil to a skillet over medium heat, fry the onion, celery, carrot until golden brown
3. Add water to a large pot and bring it to boil. Add vegetables, oxtail, bay leaves, 2teaspoon Brandy to a large pot. Cover and simmer for 3 hours over low heat.
4. Turn off the heat and rest for one night.
5. The next day, scrape away and discard the layer of fat on top of the cooking liquid. Reheat the borth and simmer for 1 hours over low heat.
6. Strain the borth through a sieve into a bowl. Simmer for further 30mins over medium-low heat. Add salt and pepper to taste. Done.
