These black bean banana brownies are a healthier alternative to traditional brownies, packed with fiber and nutrients. Paired with a simple 2-ingredient ice cream made from frozen bananas, it's a guilt-free indulgence!
Ingredients: 1 can black beans, drained and rinsed. 2 ripe bananas. 1/2 cup cocoa powder. 1/4 cup honey or maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/4 teaspoon salt. For the 2 Ingredient Ice Cream:. 4 ripe bananas, sliced and frozen. 2 tablespoons nut butter of choice optional.
Instructions: Preheat oven to 350F 175C. Grease a 9x9 inch baking pan or line it with parchment paper. In a food processor, blend black beans and bananas until smooth. Add cocoa powder, honey/maple syrup, melted coconut oil, vanilla extract, baking powder, and salt. Blend until well combined. Pour the batter into the prepared baking pan. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. While the brownies are baking, make the 2 Ingredient Ice Cream by blending frozen banana slices in a food processor until creamy. Optionally, add nut butter for flavor. Once the brownies are done, let them cool before cutting into squares. Serve the brownies with a scoop of the 2 Ingredient Ice Cream on top. Enjoy!
