A delicious and easy slow cooker fiesta chicken soup packed with vibrant flavors and hearty ingredients. Perfect for a comforting and flavorful meal.
Ingredients: 1 lb boneless, skinless chicken breasts. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 can 15 oz diced tomatoes, undrained. 1 cup salsa. 1 onion, chopped. 1 red bell pepper, chopped. 1 green bell pepper, chopped. 2 cloves garlic, minced. 1 tablespoon chili powder. 1 teaspoon cumin. 1 teaspoon paprika. 1/2 teaspoon oregano. 4 cups chicken broth. Salt and pepper to taste. Toppings: shredded cheese, sour cream, chopped cilantro, tortilla strips.
Instructions: Put chicken breasts in the crock pot. On top of the chicken, put black beans, corn, salsa, diced tomatoes, onion, red and green bell peppers, and garlic. Put cumin, oregano, chili powder, and paprika on top of the food. Set the slow cooker on low and add chicken broth. Put the lid on top and set the heat to low. Cook for 6 to 8 hours, or until the chicken is full of flavor. Take the chicken out of the slow cooker, use two forks to shred it, and then put it back in. Add salt and pepper to taste and stir well. Shred cheese, sour cream, chopped cilantro, and tortilla strips should be added on top of the hot dish.
