so update on the cursedness 🙆🏻♀️ I’ve been working around for weeks with some new ingredients and I promise these are really soft and chewy. lol I thought I’d post the recipe here in case you’ve got hot girl dietary restrictions like me 🫶🏼
INGREDIENTS
1-1/4 cup chickpea flour
1/2 cup glutinous rice flour (you can just use all chickpea flour if not available but it makes them chewier)
1/2 cup brown sugar
1/2 cup white granulated sugar
1/2 cup vegetable oil
1 egg - I use Bob’s Red Mill egg replacer for this, but here are some other egg substitutes: 1 tbsp ground flaxseed + 2 tbsp water, mashed banana, applesauce, silken tofu
2 tbsp honey
1 tsp vanilla extract
cinnamon, salt to taste
turbinado sugar (optional, for topping)
THE METHOD
1. First turn on some tunes. Get a vibe going. Preheat the oven to 350° F and line a couple of baking trays with aluminum foil or parchment.
2. In a large bowl, mix together both sugars and the oil.
3. Add your egg or egg substitute, vanilla extract, honey, cinnamon, salt; and mix that til combined.
4. Add the flour to the mixture. I find that adding it gradually while stirring makes it easier to combine thoroughly. (Also, I use a spatula for mixing but go off with your own stirring method.)
5. Scoop the dough onto the baking trays in circles, for any size cookies you like. (Optional:) Gently press each one down with a fork, top them with turbinado sugar. Or, create shallow wells with your thumb and add a drop of honey to each.
6. Whack em in the oven (gently now) and bake them for 12 minutes.
