A filling and tasty chicken taco salad that is full of different tastes and textures. It's great for a quick dinner during the week or a dish that everyone loves at a party.
Ingredients: 2 cups cooked shredded chicken. 1 cup black beans, drained and rinsed. 1 cup corn kernels. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/4 cup cilantro, chopped. 1 avocado, diced. 1/4 cup lime juice. 2 tablespoons olive oil. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 4 cups mixed salad greens. 1 cup tortilla chips, crushed. 1/2 cup shredded cheddar cheese.
Instructions: Chicken shreds, black beans, corn, cherry tomatoes, red onion, cilantro, and diced avocado should all be put in a large bowl. Mix cumin, chili powder, salt, and pepper with a whisk in a small bowl. Add the dressing to the chicken mixture and mix it all together. Spread mixed salad greens out on plates to serve. Put the chicken mix on top of the greens. Crush some tortilla chips and shred some cheddar cheese on top. Serve right away and enjoy!
