This is the classic Dutch food, and probably the first authentic Dutch dish I had before I moved here from the US. It's very simple, but good warm comfort food. There are some ice cream parlors in NL that switch to being stamppot parlors in the winter months! Go get yourself a scoop of warm mashed potatoes instead of a scoop of cold ice cream yummmm!

This recipe calls for kale as the veg to mix in, but spinach is my favorite. Endive is probably the most common variation, but I'm personally not a fan. Broccoli, cauliflower, and carrots are other options.

Both of the things that I immediately thought of as potential answers to this question are Elizabeth outbursts! I just love writing her dialogue. I'll pick the one where she is being nice to Darcy and not mean:

Ooo, I'll go with Beast/Gaston. I think that when Gaston finally gets past the initial shock of seeing Beast, he finds himself attracted to how strong he is rather than focusing on appearances like he usually does. Beast of course, doesn't know how to handle admiration for something the curse has given him and pushes against it. Basically, I like them being in love but butting heads about it constantly lol.
