Traditional Hyderabadi Fish Dum Biryani
Fish biryani is one of the most popular delicacies in Hyderabad. This dish is served in almost every Hyderabad restaurant. But most of them offer biryani. Because the coated boneless fillet was fried and added to cooked biryani rice, this version was also delicious. But the pleasure of eating Fish DUM Biryani is completely different. Two years ago, I tried this recipe, but it totally failed. But I had to rethink this blog after rethinking. This time my second attempt was successful. The taste is very delicious.
Many people don't even think of cooking fish biryani because it seems difficult. But this is not as difficult as they think. A few things to keep in mind when cooking our family restaurant in sainikpuri.
You need to use boneless fish instead of regular fish. If something goes wrong, at least you will have a chance to eat ravioli (just in case the krill on the bottom becomes mushy).
Use a thick-bottomed nonstick pan.
You will need a flat tawa / pan, on which the cooking pot should be placed.
Take care to avoid sticking or overcooking when cooking.
If you are a beginner, it is best to start with a smaller number.
Instructions For Use
Prepare Biryani Masala
Heat the pan and add Shahi jeera / coriander seeds, fennel seeds / toon, black stone flower / biryani ka Phool, cardamom, cinnamon sticks, cloves, mayes and dry roast for one minute.
Grind them into a fine powder and set aside, Fried onions.
Take 3 medium onions. Cut them into long thin pieces. Heat the frying oil. Fry the onions until golden brown.
Filter off excess oil to make it brittle. Cleaning and cutting fish fillets Soak the fillets in buttermilk for 5 minutes, then rinse gently.
Cut them into thin slices and set them aside. Rice bowl.
Put 500 grams of basmati rice in a bowl and pour in water for 30 minutes.
Rinse 2-3 times before cooking. Pickled fish.
Take a mixing bowl, add salt, turmeric powder, red pepper powder, biryani masala powder and mix.
Add 4-5 tablespoons of oil (you can use the remaining oil to fry the onions and mix again.
Add fried onions, ginger garlic sauce, green chili sauce, squeeze half a lemon, add whipped yogurt and mix well. Gently mix the fish pieces.
Leave the marinade for 15-20 minutes.
Cooking
Pour 2.5 to 3 liters of water into the container.
Add whole garam Masala spices, salt and a little oil.
Boil the water. When the water begins to boil, add soaked basmati rice.
The water stopped boiling after adding rice, so cook again. Cook from boiling point for 3 minutes, then turn off the heat. Drain the water from the rice immediately. Cooking dum biryani Apollo Fish
Grease the cooking pot with very little oil. Add fish marinade and sprinkle half rice on top.
Add fried onions, fresh mint leaves and small ghee. Cover the pan with aluminum foil and close the lid.
Place the thick pot on the flame and the pot on top.
Cook on high heat for 15 minutes. Next, boil the fire and cook for 7-10 minutes.
