Story
These delights were my favorite growing up in Cameroon. Fish rows are a delicacy there. I never knew how to make them myself until I met a friend in Maryland a couple of years ago who taught me how. Made right, these are absolutely delicious!
Ingredients
Dough:
5 & 1/4 cups of flour
3/4 cup of butter
1 spoon of Yeast (Level)
1/5 cup of vegetable oil
3/4 cup of warm water
1/2 cup of sugar
1/2 Teaspoon salt
Stuffing:
12 oz. salmon filet
8 Oz carrots
1 onion
3 beef cubes
4 tbsp. white pepper
Salt to taste
Method
1. Melt the butter in microwave. Mix this into flour. Also add the oil and mix.
2. Warm water (Warm enough for a warm shower!) add sugar, yeast, and salt, the water above,
3. Mix liquid well and pour over flour. Now mix dough well until you reach a texture that you can neat and roll! You want your dough to be slightly fluffier than pizza dough
Cover dough and allow for about 30 minutes for the yeast to make it rise. Note that it also gets fluffier as it rises!
Chop fish into very small pieces (Minced) Also chop carrots and onions into very small pieces combine all items, adding a bit of water. Allow to cook over very slow heat and stir regularly. Add a few drops of oil. You want stuffing dry (Broth free at the end!)
Once ready, you are ready to roll!
Cut dough into small pieces. (the size of a golf ball)
Flatten each piece on a clean surface using a clean roller or bud light bottle put a small portion of stuffing (1/2 spoon) and rollover.
Make sure to neatly roll, closing all edges otherwise the roll will unwrap on you in oil! The secret is to flatten the dough nice and thin enough so that when rolled, it will seal superbly!
Deep fry in hot oil until brown.
