When I'm asked to test a dozen ladles, including a fat skimmer, this pescatarian's first thought is fish stock. The fab folks at @flatheadfishandseafood hooked me up with beautifully prepped heads and bones, free of charge. After testing the ladles, I turned the delicious stock they created into this Italian-inspired fish stew, using monkfish also from Flathead Fish. So tasty! #fishandshrimpstew, required a few steps & a whole bunch of memories. Bunny occasionally asks if my vintage #spengersfishgrotto container sparks joy. It does! Plus, it has a recipe on the back that I wanted to make. My familia were regulars at Spenger's for my entire childhood. Pops had amig@s from the horse races that worked there so it was always a delicious time. Even the memories of the funky smells of the fish market make me smile. A bag of #blackcod bones & skin finally got me to make this dish. I made a #fishstock in my digital pressure cooker with aromatics & herbs. I was instantly transported back to the restaurant when the aroma hit my nostrils. I prepped my #onions & #tomatoes, gathered my seasonings & spices then moved to the stove. I moved swiftly swaying to the music I was playing, humming along. The opposite of the hustle and bustle, the clanging of plates, the laughter of diners having cocktails in the dim light regardless of the time of day. A beautiful bowl of #seafood swimming in rich broth perfumed with garlic, toasted #sesamewholewheatsourdoughbread slathered in #butter made me giddy. Delicious healing fish broth... fishmongers will often give you carcasses for free if you ask. This stuff does you so much good.
