The Instant Pot makes it easy to make mashed potatoes that are creamy and full of flavor. This side dish goes well with any meal.
Ingredients: 4 large potatoes, peeled and diced. 1 cup chicken broth. 1/2 cup milk. 4 tablespoons unsalted butter. Salt and pepper to taste. Chopped chives for garnish.
Instructions: Place diced potatoes in the Instant Pot. Add chicken broth to the pot. Close the lid, set the valve to sealing, and cook on high pressure for 8 minutes. Once done, perform a quick release of pressure. Drain excess liquid from the pot and mash the potatoes with a potato masher. Stir in milk, butter, salt, and pepper until smooth and creamy. Garnish with chopped chives before serving.
